Baked Acorn Squash

Course: Main Dish

Ingredients
  

  • 2 acron squash
  • 2 tbsp grass fed butter or ghee for dairy free divided
  • 2 tsp raw honey divided
  • 1 tsp fine sea salt divided
  • 2 tsp organic turmeric powder divided

Method
 

  1. Preheat oven to 400
  2. Wash acorn squash and pat dry
  3. Stabilize squash on cutting board and slice acorn squash lengthwise
  4. Using a sturdy metal spoon, remove seeds and stringy parts until smooth
  5. Using a sharp paring knife, score the insides of the squash about ½ deep
  6. Place squash cut side up in a roasting pan, add ¼ cup water to bottom of pan to keep squash from burning
  7. Rub 1 tsp butter in each of the acorn halves
  8. Add ½ tsp honey to each squash and rub in the squash
  9. Sprinkle ¼ tsp sea salt in each half of acorn squash
  10. Sprinkle ½ tsp turmeric in each half of acorn squash
  11. Place in oven and bake for 50 minutes. Check at 50 minutes and if insides of squash are soft, and the tops are nicely browned, remove and let cool for a few minutes before eating. If not done, cook a few minutes longer until the insides of the squash are soft and easy to stick a fork into.
