Baked Acorn Squash
Ingredients
- 2 acron squash
- 2 tbsp grass fed butter or ghee for dairy free divided
- 2 tsp raw honey divided
- 1 tsp fine sea salt divided
- 2 tsp organic turmeric powder divided
Instructions
- Preheat oven to 400
- Wash acorn squash and pat dry
- Stabilize squash on cutting board and slice acorn squash lengthwise
- Using a sturdy metal spoon, remove seeds and stringy parts until smooth
- Using a sharp paring knife, score the insides of the squash about ½ deep
- Place squash cut side up in a roasting pan, add ¼ cup water to bottom of pan to keep squash from burning
- Rub 1 tsp butter in each of the acorn halves
- Add ½ tsp honey to each squash and rub in the squash
- Sprinkle ¼ tsp sea salt in each half of acorn squash
- Sprinkle ½ tsp turmeric in each half of acorn squash
- Place in oven and bake for 50 minutes. Check at 50 minutes and if insides of squash are soft, and the tops are nicely browned, remove and let cool for a few minutes before eating. If not done, cook a few minutes longer until the insides of the squash are soft and easy to stick a fork into.
